Ginger-Peach Pie

INGREDIENTS

3 lb ripe peaches (about 10)
⅔ cup packed brown sugar


¼ cup quick-cooking tapioca
4 tsp minced fresh ginger
2 tsp fresh lemon juice
½ tsp ground cinnamon
Pinch of salt
2 rounds refrigerated pie dough (from one 14.1- oz box), at room temperature
1 egg white, beaten, for brushing
